I love cabbage. I wanted to share this cabbage soup recipe with you all today. I will say, I’ve mostly eaten cabbage it when it’s fried as my mom has been making fried cabbage since I was quite young. I do think cabbage is one of those things I prefer to be “dressed up” as it does taste quite “greenish” to me by itself.
I’m not a huge spice person, but this soup I really like with a little bit of spice. I do also believe there is a version of a soup like this that was set up for a diet plan. Nonetheless, you really can kind of create it however you would like with whatever vegetables that you would prefer 🙂
This soup is SUPER easy to make!
4 Cups (32oz box) vegetable broth
4 Cups (32oz box) chicken broth
1 Pkg dry onion soup mix
2 Onions, rough chop
2 Green peppers, rough chop
1 Red pepper, rough chop
1 Cabbage, large head – rough chop
1 or 2 cans of diced tomatoes
1 Cup celery, diced
3-4 Carrots, medium, sliced diagonally
1/2 -1 tsp Black pepper
1-2 tsp dried Oregano
Salt to taste
3 Garlic cloves, minced
Mix all in large soup pot. Bring to boil, then reduce head to medium-low. Cook until vegetables are tender.
