I probably need a lesson on taking pretty food pictures. I also don’t think they ever look great without natural light, not to mention I hid my “real” camera from Knox & Sloane and now I couldn’t remember where : /

Last night, we had Mahi-Mahi and bacon wrapped figs. I forgot to take a pic of the fish, but we basically just did olive oil, salt and pepper, then baked it in the oven for about 10-12 minutes on 400 degrees. I got the fish and figs from Sprouts.
For the bacon wrapped figs, I started out using turkey bacon. I prefer it and I buy the Applegate kind.
Since the fish was going to be cooked in the oven, I followed Martha’s advice, and used the toaster oven to cook them. I used turkey bacon because that’s all I thought we had. I washed the figs, but didn’t really peel. You can, but you don’t have to. So, some skin came off just washing.
A little side note, I’m not a huge bacon person. I kind of have to be in the mood for it, but on any occasion, I can’t stand the smell of it and the thought of it today, makes me kind of queasy at my stomach. Weird, I know. It’s probably hormonal, but it’s been this way for several years now. Oh, I also want it very, very crispy.
ANYWAYS, I put the TURKEY bacon wrapped figs in the toaster oven and the bacon would just not cook and crisp up. So, after a while I said something to Brent and he said he had picked up “real” bacon last week. I can’t remember the brand…it’s in a red and brown thin box. I dug it out of the fridge, and switched out the bacons.
I used toothpicks and pulled them out once they were done. This went much better. This was about 12 minutes. They were delicious 🙂 I think they were good as a side and would also work great for an appetizer.
