I got this recipe from my mom. She’s been making it for years and I love it. It’s easy and delicious! Not many ingredients and they are all typically things most might have on hand! I also think this one re-heats well for leftovers, and typically I don’t do chicken re-heated.
3 cups chopped, cooked chicken
1 1/2 cup chopped celery
1 cup mayo/mayo-type dressing
1/2 cup toasted almonds
1 cup shredded Swiss cheese
1/4 cup chopped onion
I used sliced almonds and usually toast in the oven or conventional oven. I like mine pretty toasted, but they will also get a bit more toasted when the entire casserole is cooking.
Combine chicken, celery and dressing, 1/4 cup almonds, cheese and onion in a bowl. Mix well. Pour into a 6×10 baking dish. Bake at 350 for about 25 min. Check center with fork to see if warm. Sprinkle remaining almonds on top!
