This was dinner last night and I seriously could have eaten five of them. They are amazing and they are easy! No specific recipe was used, but just what I had and what sounded good.
Slice eggplant & brown in a skillet with EVOO & Kosher Salt until it starts getting soft.
Then, you basically just layer!
Mine is layered with eggplant, tomato, chopped basil, mozzarella and bread crumbs.
You can stack as high as you’d like with as many layers as you would like.
I topped with basil, Parmeasan flakes, a little EVOO and balsamic.
Up to you if you want salt and pepper.
Put in oven at 400 for 20-25 min.
It really is SO good. The juices from everything blend and it tastes delicious.
I used gluten free brown rice “bread crumbs” 🙂
