Here are some yummies from the end of last week/weekend...
Thursday night - How delicious to these look?? Well, I did NOT make them. I purchased them at Super Target! I actually got both of these for about $3.50. I think they were close to $7 but there was a coupon on the packaging. They had asparagus and cheddar in the chicken. Really good. I also picked up several other dishes with coupons :)
Friday, I decided I would make Italian Sausage sandwiches for dinner. Hubby LOVES Italian Sausage. I had a few sweet potatoes so I googled a recipe for fries! There are several local places that have sweet potato fries and I much prefer them over regular fries. I've never been a big fry girl....Here is what I did...
We have good knives....some really good ones. THEY WOULD NOT EVEN BUDGE INTO THE POTATOES!! So, after I washed & skinned the potatoes, I put them on a plate and zapped them in the microwave for a few minutes. This allowed them to soften up and for hubby and I to cut them. I think he only helped me because he doesn't trust my mad knife skills ;)

I got the sweet potato fries recipe here. It is an awesome blog with SO many yummy recipes on it! I took the below recipe directly from it.....
Oven Baked Sweet Potato Fries
Several people have mentioned that their fries didn’t come out crispy. Please note that cooking times are an estimation. Different ovens cook differently so you may need to increase the time to reach desired doneness. Ovens should also be regularly calibrated to ensure that the temperature inside the oven is the temperature on the dial.
1 – 1 1/2 lb sweet potatoes
1/4 cup olive oil
1/2 tsp kosher salt
1/2 tsp paprika
1/4 tsp cinnamon
Preheat oven to 425 degrees. Line a baking sheet with aluminum foil (preferably the easy release kind).
Peal the sweet potatoes. Cut into strips that are about 1/2 inch wide on each side.
Place the sweet potatoes into a resealable plastic bag. Add oil, salt, paprika and cinnamon. Seal the bag and shake well to thoroughly coat the fries. Spread the potatoes out onto the baking sheet in a single layer.
Cook for 30 minutes, turning every 10 minutes, until slightly browned. Transfer immediately to a paper towel lined plate and serve warm.
**I did not do all the exact measurements. As I've mentioned before, I like to just estimate and put what I like based on how well I like it. Nice, I know. Well mine turned out SO awesome. Hubby LOVED them....as did I. Yes, we ate the whole tray.
Here are the fries with the Italian Sausage sandwich. To make these sandwiches, I used Johnsonville MILD Italian Sausage, Traditional Prego sauce, white onion, banana peppers, parmesan cheese & whole grain sub buns. I sauteed the onions banana peppers (though hubby put fresh and sauteed peppers on his. He is OBSESSED with banana peppers.) The sandwich was SO SO SO good :)
Saturday, Hubby & my brother had more of the above sandwiches and I ate the fries. For dinner, Hubby and I went with some friends, Travis & Lindsey, to Outback! We went to their house to watch the Arkansas game (we won't talk about that). Travis and Lindsey were talking about liking ahi tuna and hubby and I quickly said our favorite was at Outback. If you all have not tried their seared ahi tuna, you must. It is amazing. I forgot to snap any pics!
Sunday morning, I woke up to find these two cuddled up on the couch..... I decided to fix them something yummie! I used our waffle machine and whipped these up. I added powdered sugar, cool whip & strawberries :)
Sunday night, we went to dinner at a local restaurant to celebrate our friend Jamie's birthday! Her dad was so nice to have us :) Jamie lives one street over and I met her just a few months after I met hubby as they grew up together. Jamie and hubby's sis have been best friend for a long time!

So yes, much love for food. It was s delicious weekend. I've got to cut more of my carbs though. I've gained lbs and though it could definitely be from several things, I imagine my food intake is the top one, haha.
Tonight, I'm making crab stuff tomatoes :) We will see how they turn out!
